Nutrition: Shelby Rodriguez

Pacesetter: Ms. Shelby (Panttaja) Rodriguez, MPH, RDN, LD, CSG  

Shelby Rodriguez is an esteemed professional in nutrition and public health, holding a B.S. in Human Nutrition and Dietetics from UNCG and a Master of Public Health, specializing in Maternal and Child Health, from the University of Minnesota. Ms. Rodriguez also completed a comprehensive and competitive Dietetic Internship at the Minneapolis VA Health Care System. She is now board-certified as a Specialist in Gerontological Nutrition and in Public Health. 

As the Lead Dietitian for a long-term care company, Ms. Rodriguez manages nutritional care for 175 beds across two commercial kitchens, showcasing more than seven years of expertise. Her leadership in pioneering nutritional education initiatives and driving advancements in public health has empowered underserved communities and fostered transformative change. In addition to her clinical role, Ms. Rodriguez serves as a part-time faculty member at Lane Community College in Oregon. 

She also serves as a Subject Matter Expert for the Commission on Dietetic Registration, was appointed as the Nominating Committee Chair for the Oregon Board of Nutrition and Dietetics, and serves on the Commission on Dietetic Registration’s Specialist Certification Panel.
