The Nutrition Department hosted a School Nutrition Association workshop on June 20, 2018. Each year, UNCG is a participant in the Annual Meeting for the NC School Nutrition Association. As a part of the week long meeting with educational sessions and an equipment/product exposition, 50-75 NC-SNA members come over to the campus for a hands on workshop for skills development. In the past, workshop topics have been pasta making, canning, jelly production, cheese making, etc. This year the workshop focused on knife skills including sharpening and multiple cutting methods, along with basic kitchen skills such as measuring, tare weights and the impact of acid/alkaline mediums on vegetable texture and color. The final component of the workshop included a “chopped” challenge where participants worked with a limited group of food supplies to create a healthy meal.
